Some of our customers call this Chili Chicken, but it did originate in Santa Fe. When other vendors were opening bags of chips to serve with their salsa, we stuck to our philosophy that real food demands real cooking. If we&#8217;re going to be in the specialty foods business, we&#8217;d better get cooking. Three hundred pounds of chicken, thirty onions and fifteen bunches of cilantro went toward our effort, but the results were impressive.<br/><br/>Many happy customers walked away with our Green Sauce and a new Chicken Recipe. There&#8217;s something magical that occurs when chicken meets green chile and cheese. The flavors blend, becoming one. The fierceness of green chile gives way to a more pronounced statement of flavor, allowing the protein to come forward. Each year we get hundreds of requests for our cooking recipes. Some claim their kids have become addicted to the flavors and we figure it&#8217;s a good thing. In the fast paced world of soccer, baseball and scouts, we&#8217;re happy to manufacture and promote quality food products.<br/><br/>Like with all of our cooking recipes, this gourmet meal can be accomplished in thirty minutes.<br/><br/>Santa Fe Chicken-serves 4<br/><br/>2 lbs. boneless chicken ******* or tenders cubed<br/><br/>1 cup chopped onion<br/><br/>2 cloves chopped garlic<br/><br/>3 tbsp canola oil<br/><br/>6 oz black sliced olives<br/><br/>4 oz shredded cheddar cheese<br/><br/>10 sprigs chopped cilantro or parsley (no stems)<br/><br/>16 oz. The meat seems to stay more firm and keeps in its moisture much better than if you defrost the chicken in a microwave or even at room temperature. Fresh chicken ******* can also be used.<br/><br/>Now onto the rest of the chicken recipe.<br/><br/>Choose as many chicken ******* as you wish to serve.<br/><br/>Slice a fresh lemon in half. Rub the lemon all over the *******. In fact, cooking through deep-frying is actually quite easy, that is, if you know how to do it.<br/><br/><strong>How a Deep Fryer Works </strong><br/><br/>It is important to read the deep fryer instructions carefully because different fryers work in different ways. You will also need to have the correct oil to cook with because oils need different cooking times and the results vary depending, which oil you use.<br/><br/>Pour the oil into the deep fryer, keeping it well below the indicated max fill line. If there is no max fill line, check the instructions. For more details www.breakfasts-recipes.com You will need enough oil so your food is immersed but do not fill it right up because your food will displace some of the oil.<br/><br/>There will be a temperature control on the machine, either a button or a knob. Some fryers let you know when the oil has reached the right temperature but if your machine does not have this feature, you will need to use a thermostat or drop a cube of crustless white bread into the fryer. If it turns golden brown after one minute, the oil is at the right temperature for deep-frying.<br/><br/>If the oil is too hot, the food will be cooked on the outside and still partially raw inside. If the oil is not hot enough, the food will soak it up and come out soggy.<br/><br/>Put the food into the fryer, using a slotted spoons or tongs if there is no basket in the fryer. Do not put too much food in at once because this cooking method is fast and cooking in batches is quick and easy.<br/><br/>If you are frying frozen food, try to brush off as many ice crystals as you can because they can cause spattering when they come into contact with the hot oil.
