The Best Chicken Recipe. Line Up the Family!

At the recent Fiery Foods and Barbecue show in Albuquerque, we made enough Santa Fe Chicken to serve 5000 guests. Some of our customers call this Chili Chicken, but it did originate in Santa Fe. When other vendors were opening bags of chips to serve with their salsa, we stuck to our philosophy that real food demands real cooking. If we’re going to be in the specialty foods business, we’d better get cooking. Three hundred pounds of chicken, thirty onions and fifteen bunches of cilantro went toward our effort, but the results were impressive.

Many happy customers walked away with our Green Sauce and a new Chicken Recipe. There’s something magical that occurs when chicken meets green chile and cheese. The flavors blend, becoming one. The fierceness of green chile gives way to a more pronounced statement of flavor, allowing the protein to come forward. Each year we get hundreds of requests for our cooking recipes. Some claim their kids have become addicted to the flavors and we figure it’s a good thing. In the fast paced world of soccer, baseball and scouts, we’re happy to manufacture and promote quality food products.

Like with all of our cooking recipes, this gourmet meal can be accomplished in thirty minutes.

Santa Fe Chicken-serves 4

2 lbs. boneless chicken ******* or tenders cubed

1 cup chopped onion

2 cloves chopped garlic

3 tbsp canola oil

6 oz black sliced olives

4 oz shredded cheddar cheese

10 sprigs chopped cilantro or parsley (no stems)

16 oz. Coyote Trail Green Chile Sauce

In a large frying pan,add canola and saute chicken and onion over med heat Brown chicken well, add garlic Drain and transfer to a shallow baking dish Add Coyote Trail Green Chile Sauce and mix well Top with cheese, olives, cilantro or parsley Bake @ 350 for fifteen minutes until chicken bubbles remove and serve with beans, rice, tortillas and a salad.

Baked Roasted Chicken:

Ingredients:

1/2 cup butter

2 Tablespoons dried rosemary, crushed

2 Tablespoons minced fresh parsley

3 garlic cloves, minced

1 teaspoon salt

1/2 teaspoon pepper

1 whole roasting chicken (5 to 7 pounds)

8 small red potatoes, halved

6 medium carrots, cut into 2 inch pieces and halved lenghtwise

2 medium onions, quarted

Directions:

1. In a small saucepan, melt butter. Add rosemary, parsley, garlic, salt and pepper.

2. Place chicken with ****** side up on a rack in a roasting pan, tie drumsticks together with cooking twine.

3. Spoon half of the butter mixture over chicken.

4. Arrange vegetables around chicken, drizzle remaining butter mixture over vegetables.

5. Cover and bake at 350 F for 1 1/4 hours, basting every 30 minutes.

6. Uncover, bake one hour longer or until a meat thermometer reads 180 degrees, basting occasionally.

7. Cover and let stand 10 minutes before carving.

SUMMER HAS ARRIVED!  Boy do we know it here in Texas!  From the weather maps I have seen, I’m sure many of you are also experiencing some pretty hot summer days.  And one of the most popular of summer activities is a picnic.  Picnics for lovers, picnics for families, picnics with friends, work picnics, picnics at the beach, etc. Who doesn’t love a picnic?

Diabetics enjoy picnics, too, but they often worry that their dietetic needs won’t be met.  There’s nothing like a diabetic arriving at a picnic to discover a meal full of starches and sweets.  And, unfortunately, many hosts feel that to meet the diabetics needs, they must have a second menu or extra dishes for the diabetic.  Not only can this make the diabetic feel as if they are creating extra work for their hosts, it simply isn’t necessary.  If you are planning a picnic, check out this menu below.  It is an easy menu that will cater to the diabetics needs and the rest of the crowd won’t even know it.  Our menu features Southern Fried Chicken, but you could always pick-up carry-out fried chicken if the picnic isn’t at your home or you don’t want to spend time frying the chicken yourself.  Our Blackberry Twist Lemonade is a great summer beverage.  But, again, if convenience is a big issue, pick up some diet sodas and ice them down. 

So load up the picnic basket and head out for some worry-free fun with our picnic menu of Southern Fried Chicken, No Mayo Bean Salad, Vegetable Tray, Sand Tarts, and Blackberry Twist Lemonade.

SOUTHERN FRIED CHICKEN

2 1/2 lb frying chicken, cut-up

1 cup all-purpose flour

1/2 tsp fresh-ground black pepper

1 tsp salt

1/2 tsp paprika

Wash chicken and pat off excess water.  Mix remaining ingredients together and place in a zip-top type plastic bag.  In a large skillet, put canola oil to about 1/2-inch depth and heat.  Place chicken pieces 1 or 2 at a time into bag with flour mixture.  Shake to coat well.  Shake off excess flour and add chicken to skillet.  Cook chicken over medium heat, turning to brown all sides, for 15 to 20 minutes.  Reduce heat, cover tightly, simmer 30 to 40 minutes or until tender and cooked through.  Remove the lid from skillet the last 10 minutes of cooking to allow chicken to brown.  Remove from skillet and drain on paper toweling.

NO MAYO BEAN SALAD

2 cans kidney beans, drained

1/2 cup diced onion

3/4 cup pickle relish

3 hard-boiled eggs, diced

2 tbsp cider vinegar

2 tbsp Splenda

In a medium mixing bowl, combine all ingredients.  Mix well. 

VEGETABLE TRAY

Make  a pretty presentation of fresh, colorful vegetables.  I suggest baby carrots, sliced cucumbers, tomato wedges, fesh broccoli crowns and olives. 

SAND TARTS

1 cup butter, softened

1/4 cup Splenda, granulated

2 cups flour

2 tsp vanilla extract

1 cup chopped pecans

2 tbsp Splenda, granulated

2 tsp cornstarch

Preheat oven to 350 degrees.  Beat butter and 1/4 cup Splenda granulated at medium speed with electric mixer about 2 minutes until creamy.  Gradually add flour, beating at low speed until blended.  Stir in vanilla and pecans.  Shape into 1-inch balls and place onto cookie sheets.  Bake 20 minutes; remove from oven and place on wire racks to cool. 

Process 2 tablespoons Splenda granulated and cornstarch in a blender or food processor.  Roll cookie balls in mixture.

BLACKBERRY TWIST LEMONADE

2 cups fresh blackberries or unsweetened frozen blackberries, thawed

1 cup fresh lemon juice

1 cup Granulated Splenda

4 cups cold water

Put berries, lemon juice, and Splenda into blender.  Process mixture until smooth, scraping down sides.  Press mixture through a sieve into a pitcher.  Discard solids remaining in the sieve.  Stir in water.  Serve over ice.  Yield:  7 servings with 4 grams sugar each

I’d like to share this chicken fried steak recipe because my family loves it and they always ask me to cook it again. It can be served at home, potluck, or special party.

Ingredients of chicken fried steak recipe:

1/2 cup flour

1 teaspoon paprika

1/4 teaspoon dried basil

1/4 teaspoon dried thyme

1/8 teaspoon garlic powder

1/8 teaspoon onion powder

Salt and pepper to taste

1 1/2 pounds boneless beef round stead, cut 3/4-inch thick

2 tablespoons vegetable oil

1 1/2 cups beef broth or stock

Step by step of chicken fried steak recipe:



Combine flour and seasonings in a small bowl.

Cut steak into 6 serving pieces. Dredge steak with seasoned flour, pressing as much flour as possible into meat. Reserve any leftover flour.

Heat oil in a skillet.

Add steak and cook until brown, about 5 minutes per side.

Transfer meat to at least a 3-1/2 quart slow cooker. Pour in the broth.

Cover and cook on low for 8-10 hours or on high 4-5 hours.

Stir once during the last half hour of cooking on high.

Remove meat to serving platter and keep warm while making gravy below.



Ground Peppercorn Gravy

5 tablespoons flour

3-1/2 cups milk

1/2 teaspoon freshly ground peppercorns

Salt to taste



Transfer juices from slow cooker to a skillet.

Whisk in flour plus any of the reserved seasoned flour. Whisk and cook until golden brown, over medium heat on a range. Gradually stir in milk, whisking continually, until gravy thickens.

Stir in pepper and season with salt to taste. Serve over steak at the table.

The Olive Garden is a great place to eat, but my budget doesn’t allow me to eat out as much as I did a few years ago. Fortunately, you can find some of their recipes online and make them at home! I wanted to take just a moment and give you my Top 3 Olive Garden recipe recommendations. With these recipes, you can impress all of your friends!

Olive Garden Chicken Vino Bianco

2 tablespoons olive oil or vegetable oil

4 boneless skinless chicken breasts

1 cup flour

1/4-1/2 cup sliced onions

2 cloves garlic, minced

1/2 cup white wine (I like Bella Sera Pino Grigio)

salt

pepper

2 cups sliced mushrooms

4 tablespoons butter or margarine

1/2 cup roma tomatoes

cooked linguine or fettuccine

Heat oil in skillet on med-high heat.

Lightly dredge chicken breats in flour, season with salt and pepper and brown sides in skillet and remove onto plate until later.

Stir in onions, garlic, and butter, cook until tender; then add mushrooms and cook until golden.

Stir in wine and bring to a simmer.

Return chicken to the pan, and cook over med-high heat until chicken is done; add tomatoes and cook until tender.

Serve over cooked fetticuine or liguine noodles.

Olive Garden Parmesan Crusted Chicken Recipe

1 cup Plain Bread Crumbs

2 tablespoons Flour

1/4 cup Kraft Parmesan Cheese

1 cup Milk

6 (1/2″) Thick Pieces of Chicken ****** Strips (chicken tenders)

Vegetable Oil (frying)

2 cups dry Bowtie Pasta

2 tablespoons Butter

3 tablespoons Olive Oil

2 teaspoons Crushed Garlic

1/2 cup White Table Wine (Chablis)

1/4 cup Water

2 tablespoons Flour

3/4 cup Half and Half

1/4 cup Sour Cream

1/2 teaspoon Salt

1/8 teaspoon Basil Leaves

3/4 cup Mild Asiago Cheese (finely grated)

***Garnish***

4 Broccoli Florets (lightly steamed)

2 White Mushrooms (quartered lightly steamed)

1/4 teaspoon Crushed Red Pepper

1. Prepare pasta according to package directions.

2. Wash and drain chicken strips.

3. Mix breadcrumbs, flour, and Parmesan cheese together. Place milk in dish for dipping. Dip chicken in breadcrumb mixture and then in milk and then back in breadcrumbs.

4. Place in fry pan that the oil has been heated and fry at medium to medium low temperature until golden. Remove and drain chicken.

5. In a saucepan on medium heat, melt butter, add olive oil. Whisk in flour until mixture is blended. Quickly add garlic, water, and 1/2 teaspoon of salt stir well. Add wine and blend. Immediately add half and half and sour cream stir. When mixture is smooth add grated cheese stir until melted. Finally sprinkle fresh basil in the sauce and stir lightly and remove from heat.

6. Place 2 cups pasta in individual pasta dish. Spoon about 1/2 - 3/4 cup sauce over pasta, add broccoli and mushrooms. Place Parmesan Chicken on pasta and sprinkle red crushed pepper and add grated Parmesan cheese if desired.

Olive Garden Stuffed Mushrooms

8 - 12 Fresh Mushrooms

1 (6 oz.) Can Clams (drained and finely minced) (save 1/4 cup of clam juice for stuffing)

1 Green Onions (chopped finely, about 1 Tbsp.)

1 Egg (beaten)

1/2 tsp. Minced Garlic

1/8 tsp. Garlic Salt

1/2 C. Italian Style Bread Crumbs

1tsp. Oregano Leaves

1 Tbsp. Melted Butter (cool)

2 Tbsp. Finely Grated Parmesan Cheese

1 Tbsp. Finely Grated Romano Cheese

2 Tbsp. Finely Grated Mozzarella Cheese (for stuffing)

1/4 C. Finely Grated Mozzarella Cheese (for garnish)

1/4 C. Melted Butter

Wash and remove stems from mushrooms, pat dry. Save stems for another recipe. In mixing bowl place clams, onions, garlic salt, minced garlic, butter and oregano. Mix through and blend well. Add Italian bread crumbs, egg, clam juice and blend. Stir cheeses in clam stuffing and mix well.

Place clam mixture inside mushroom cavity and slightly mound clam mixture. You should be able to stuff between 8 - 12 mushrooms depending on the size of mushrooms.

Place mushrooms in slightly oiled baking dish. Pour butter over mushrooms. Cover and place in a preheated oven at 350 decrease for about 35 - 40 minutes. Remove cover and sprinkle freshly grated mozzarella cheese on top and pop back in oven just so the cheese melts slightly, garnish with freshly diced parsley.

Fried Rice - A must have dish in Chinese restaurants, fried rice is the ultimate Chinese food, and can be one of the most flexible in your cookbook because you can use leftover rice and ingredients to make it.  Of course, you can use fresh ingredients but it’s best to use rice that has been kept in the fridge overnight for best results. Ingredients usually involved in making fried rice are eggs, scallions, diced meat of either beef, chicken or pork, ham, shrimps and vegetables such as celery, peas, carrots, bean sprouts and corn. There are many varieties of fried rice but the more popular ones are the Yangchow and Fujian fried rice.

Kung Pao Chicken - Kung Pao chicken or Kung Po chicken is a Chinese dish from Szechuan cuisine and is considered to be a delicacy. The recipe for this mouth watering dish commonly calls for diced chicken that is pre-seasoned and quickly stir-fried with unsalted roasted peanuts, red bell peppers, rice wine or sherry, hoisin sauce, sesame oil, oyster sauce, and chili peppers. Alternatively, you can use prawn, scallops, beef or pork in place of the chicken.

Moo Shu Pork - This is a dish of northern Chinese origin and a favorite of many. Ingredients in a Mu Xu pork recipe often include green cabbage, wood ear mushrooms, scrambled eggs, carrots, bean sprouts, day lily buds and scallions. Celery, onions, bell peppers, snow pea pods, bok choy and Shiitake mushrooms are occasionally used. The vegetables are cut into long and thin strips before cooking, with the exception for bean sprouts and day lily buds. Fried Mu Xu pork is then wrapped in moo shu pancakes that is brushed with hoisin sauce and eaten by hand. Moo shu pancakes are thin wrappers made of flour that is easily available in supermarkets and steamed just before eating.

General Tso’s Chicken - General Tso’s chicken is a Hunan dish that tastes spicy and sweet and very popular in Chinese restaurants in America and Canada where it’s often marked as a “chef’s specialty”. General Tso’s Chicken recipe commonly involves battered chicken deep-fried and marinated with hot chili peppers, scallions, sugar, Shaoxing wine, sesame oil, soy sauce, rice vinegar, garlic and ginger.

Egg Rolls - Egg rolls are one of the most popular Chinese foods, and for good reason. This savory roll is made by wrapping a combination of chopped cabbage and meats and sometimes noodles in a sheet of dough. It is then dipped in egg and deep fried to perfection. Orange Chicken - This appetizing  Chinese dish is made of chicken chopped into bite size pieces and battered, and then fried with thick sweet and spicy chili sauce flavored with orange. The traditionally Chinese recipe for orange peel chicken as it’s sometimes called, is to deep fry the chicken first and then stir fry it in a lightly sweet soy-based sauce flavored with dried orange peels. Vegetables like baby carrots and bok choy are used as the garnishing. However, cooks in Western restaurants do not use dried orange peel but rather orange juice or fresh orange peel and a substantial amount of sugar to make the sauce. Sweet and Sour Pork - This savory-sweet famous Chinese dish is of Cantonese origin. It is a good dish to prepare when you are planning on having guests, who will be wildly impressed with your cooking skill. As with other Chinese food recipes, the key to making a great Sweet and Sour Pork dish is in the sauce made of sugar, ketchup, white vinegar, and soy sauce. Its ingredients include pork, onion, bell pepper and pineapple chopped into bite size pieces.

Mapo Dofu - Mapo doufu or Mapo tofu is a popular Chinese dish from the Szechuan province. Ingredients used for this recipe include tofu or beancurd, and minced beef or pork cooked in a bright red spicy sauce based on chili.

Chop Suey - Chop suey or “za sui” or “shap sui” literally means ‘mixed pieces’ is an American-Chinese dish usually employs leftover vegetables and meats stir fried quickly in a sauce thickened with starch. It is a great dish when you need to use up the last of yesterday’s chicken or pork roast and can incorporate meats of any kind such as pork, shrimp, beef, fish or chicken and various vegetables from bean sprouts to cabbage and celery. For a family meal straight from your grandmother’s recipe box, make your family a meal featuring chicken continental, saucy carrots and a lettuce salad tossed with your own homemade tomato soup French dressing.  Chicken continental is a chicken and rice dish so you have your meat and grain in one dish.  Add saucy carrots as your vegetable and toss a mixture of salad greens with your homemade dressing and you have a good, old-fashion meal to feed your family.  This menu is perfect for a sit-down family dinner.  If you follow this blog, you know I am a proponent of sit-down family meals.  I believe it is a lost art in today’s generation and one we as a society will eventually pay for.  Whether you are a large family with five or six children or a single parent with one child, it is so important to take the time to sit down together at dinner and discuss the days events.  It is amazing how much you can learn about your child’s life. This is also the perfect opportunity for you to impart your ideas and morals to your child.  So take the time.  It is important!

CHICKEN CONTINENTAL

3 to 4 lb frying chicken cut-up

1/3 cup seasoned flour (season with poultry seasonings to suit your taste)

1/4 cup butter

1 can (10 1/2 oz)condensed cream of chicken soup

2 1/2 tbsp grated onion

1 tsp salt

dash of pepper

1 tbsp chopped parsley

1/2 tsp celery flakes

1/8 tsp thyme

1 1/3 cups water

1 1/2 cups Minute Rice

Preheat oven to 350 degrees.

Roll chicken pieces in flour and brown in butter. Remove chicken from pan. Into the pan and drippings, stir in soup, onion, salt, pepper, parsley, celery, and thyme. Stir while bringing to a boil. Spread Minute Rice into a 1 1/2-quart shallow casserole dish. Reserve 1/3 cup of the soup mixture and pour rest over the rice. Stir to moisten all the rice. Top rice with chicken pieces and pour reserved soup over chicken. Bake, covered, for 30-40 minutes until chicken is done.

SAUCY CARROTS

5 large carrots

1 tbsp butter

1/4 cup honey

1 tbsp brown sugar

1 tsp lemon juice

Scrape and slice carrots. Cook carrots in small amount of water until tender crisp. Drain. Melt butter and add sugar. Stir until sugar is dissolved. Add remaining ingredients. Mix well. Add carrots and let simmer 20 minutes, stirring occasionally.

TOMATO SOUP FRENCH DRESSING

1 cup tomato soup

1/2 cup sugar

3/4 cup vinegar

1 tsp salt

1/2 tsp pepper

1/2 tsp paprika

2 tsp prepared mustard

1 tbsp Worcestershire sauce

Mix ingredients in a bowl and slowly add 1 1/1 cup oil. Place in a container with 6 cloves garlic. Will keep for weeks in the refrigerator.
